Meat breeds from the World
Meat culture knows no boundaries. In addition to the famous and appreciated Italian breeds, there are excellences from every corner of the globe.
At Premiata Braceria Toscana, we have chosen to bring them all in one place: a journey through unique varieties, processed using dry ageing, cutting and cooking techniques that enhance their most authentic characteristics. It is this combination, extraordinary raw materials and craftsmanship, which distinguishes and differentiates us from other restaurants.
Rubia Gallega
Considered by many the best meat in the world, Rubia Gallega is a true Spanish icon. Here you will find it selected in the best maturations, ready to unleash intensity, marbling and a deep flavour.
Chianina
The Valdichiana white veal senese and aretina is the breed that best represents our roots. At the Braceria we bring it to the table in the most authentic way: large cuts, slow cooking and absolute respect for Tuscan tradition.
Galician Friesian
From Galicia also comes the lesser-known but surprising Friesian: a savoury, mature meat with lactic and mineral notes that tell of Atlantic pastures. A rare cut that you can only taste in a few restaurants, and which we have chosen to propose to true enthusiasts.
Black Angus
Among the best-known and best-loved breeds in the world, the Black Angus is a timeless classic. At the Braceria we present it in its purest form: juicy cuts, balanced marbling and cooking designed to enhance its tenderness.
Wagyu
Japanese Wagyu is a meat bordering on legend. Unique tenderness and marbling, the result of a centuries-old tradition. We process it with respect and precision, to offer you a rare taste that tells the very essence of meat culture.

As soon as you enter our premises, it is impossible not to be amazed: the maturation cells show off the large loins just waiting for the embers. There are leaner pieces and others more marbled, with different textures and consistencies, from the most delicate to the most intense and persistent taste.
Our service will guide you in your choice, to propose the Fiorentina that best reflects your taste. But they all have something in common: they are traditionally high, cooked rare and laid on Argentinean wood embers, the best there is.
It is the signature dish of our house, and it is also the reason why we are recognised as the steakhouse of reference in Siena.

In our workshop we produce beef sausages.
Selected pieces of Rubia, Chianina and other fine breeds are finished by hand, seasoned with spices and left to mature for the necessary time.
This processing gives rise to hams, carne salada, salami e salami.
You can find them in our chopping boards, samples that you can't not try.

Each roll recounts a different encounter: the freshness of a Chianina tartare mingling with the scent of mint, Rubia becoming velvety with a warm fondue, the sweet-savoury contrast of figs meeting the crunchiness of vegetables, up to the most delicate creations with citrus fruits and spices.
If you love novelty, let yourself be surprised by the unique meat sushi sienna.and combined with ingredients that exalt, do not cover. Pecorino and raw milk cheeses, crunchy vegetables, homemade sauces, dried fruits, smoked meats, spices. Every bite is a journey.

Tartare, steaks and fillets, with the best wines to match
Not only Fiorentina steak and rib-eye steak: our braceria's menu also offers tartare, slices and fillets made from the world's finest meats.
Le tartare, knife-beaten, they are served with the seasonings on the side so as not to alter the authentic taste of the meat. Try the Trio of TartareChianina, PBT Sublime and Rubia Gallega on the same plate.
Le cut, 300 grams of pure enjoyment, come to the table with baked potatoes, salad and beans, for a side dish that smells of Tuscany.
I fillets are the softest and finest part of the sirloin, a meat that melts in the mouth and finds its ideal companion in an elegant glass of our wine list.
